Eggnog, a rich seasonal drink has become a holiday and winter favorite beverage. Commercial or homemade, the varied ingredients make it a treat for every diet and taste.

The origin of eggnog fluctuates between US and England, depending who is telling the story. There are now commercial eggnogs, low fat eggnogs, reduced fat, nondairy, alcoholic and nonalcoholic eggnogs, to name only a few. There is an eggnog to suit every taste and need.

Basic Traditional Eggnog

Christmas or winter eggnog is based on a dozen beaten egg yolks and ½ cup of sugar to which whiskey and rum and/or Brandy are added. The whites are then whipped up together with another ½ cup of sugar and lightly whipped heavy cream. This combination is topped with nutmeg and placed in the refrigerator to chill. Variations are first beating the whites and sugar and adding alcohol and then whipping up the yolks with some whole milk added. (The alcohol can be left out for an eggnog for children and for those who dont drink). Combine all ingredients; add vanilla, chill and top with nutmeg.

Basic traditional eggnog can be purchased at the grocery store or liquor store already made. It is usually delightful but many prefer to keep a tradition of making their own unique sweet creamy drink.

Vary the Alcohol of the Eggnog

The above recipes can be perked up, if needed, with unique flavoring.

  • Instead of basic rum, try adding spiced rum or dark rum.
  • Add a rye whisky to a splash of rum to the eggnog.
  • Use double the brandy to rum for special eggnog.
  • Mulled wine or Port can be used to substitute for heavier alcohol.
  • Beer can be substituted for the alcohol (an acquired taste)
  • Chocolate syrup or shavings or wine can be added

Eggnog without Added Sugar

An interesting change to using cups of sugar in the nog is to use a creamy liquor. Any favorite cream liquor can be used.

Baileys Irish Cream Liquor Eggnog

  • Separate about 8 eggs, beat the whites till fluffy and the yolks till creamy. Add the eggs together.
  • Add 1 ½ cups heavy cream and a teaspoon vanilla.
  • Combine this with 4 cups Baily.
  • Top with nutmeg and a dash of cinnamon.
  • Refrigerate.

The Original Substitute Low calorie, Low Cholesterol Eggnog

  • Combine 1-quart skim or 1% milk with 1-pint egg beater (egg substitute) solution.
  • ¼ cup sugar substitute. (Amount may vary depending on whether Splenda or sweet n low, or other is used)
  • 2 tsp vanilla extract
  • 1-2 tbs rum or brandy extract to taste.
  • (A low calorie prepared or powder Dulce de Leche pudding can be blended for a more creamy effect and taste)
  • Chill before serving.

Quick and Easy Personalized Eggnog

The following recipe can be made with store bought alcohol free eggnog or for an extra zing, with store bought alcoholic eggnog.

White Russian Eggnog

  • 1 part vodka to 1 part kahlua
  • Add equal amount of fresh cream.
  • This is poured into slightly less than 1 part eggnog.
  • Add crushed ice and shake and serve.

Eggnog without Cream

There are many substitutes for cream in eggnog including whole milk.

  • Substitute 2 cans condensed milk for the heavy cream.
  • Use 2 cups coconut milk instead of heavy cream. (This drink demands rum as its alcohol base to keep the tropical pina colada- like flavor).
  • Substitute soymilk for cream or milk in recipe, additionally substitute tofu blended with the soymilk for nondairy, non-egg eggnog.
  • Try kefir as a milk or cream substitute for a probiotic boost in your eggnog
  • Purchase any yogurt smoothies or make one at home with fruit and yogurt blended, as a base for home made eggnog.

Eggnog is a centuries old winter treat but whose time seems to last only through Valentines Day so be sure to experiment and drink or serve generously while available.
